Tasting Profile
Vintage Nectar 2021 from 3 Sons Brewing Co. pours an impenetrably dark near-black, viscous as motor oil, with a rich dark-brown head that offers decent production before fading with minimal lacing — a hallmark of its monumental body. The nose is immediately and assertively bourbon-forward, a rich and slightly intimidating wall of spirit warmth layered with red grape, cherry, espresso, caramel, molasses, and toasted oak — an aromatic kaleidoscope shaped by the interplay of Heaven Hill and Widow Jane barrels after 29 months of patient aging. On the palate, the mouthfeel is intensely thick and chewy, coating every surface with dense, oily fullness.
Sweetness is prominent yet balanced: brown sugar, syrup, and vanilla weave through notes of dark chocolate, espresso, caramel, and port wine, while the bourbon influence is massive but superbly integrated with the semi-sweet base stout. Bitterness is restrained, allowing the barrel complexity to lead. The finish is long, warming, and decadent, with persistent echoes of toast and oak. A supreme cellaring candidate, this is a BBA imperial stout of rare calibre. Explore more on the Untappd page.
Food Pairing
The 3 Sons Brewing Vintage Nectar 2021 barrel-aged imperial stout pairs magnificently with a rich dark-chocolate fondant cake, where the bourbon and vanilla barrel notes echo the bittersweet cocoa depth. Equally compelling alongside an aged Comté or cave-ripened Gruyère, whose crystalline, nutty character harmonises beautifully with the stout’s espresso and caramel complexity.
