Egly-Ouriet’s 2007 Brut Grand Cru Magnum is a benchmark expression from the legendary Ambonnay Grand Cru terroir. Poured from the celebrated 1.5L format, which promotes slower, more harmonious maturation, it unveils aromas of ripe golden apple, toasted brioche, roasted hazelnut, and candied citrus peel. On the palate, the mousse is fine and persistent, framing a rich, vinous core of white peach, dried apricot, honey, and subtle chalk minerality. The 2007 vintage lends exceptional depth and vinosity, with a long, saline finish that is quintessentially Pinot Noir-driven and Grand Cru in character.

Ideal alongside pan-seared foie gras with a quince reduction, where its toasty depth and natural richness create a luxurious harmony. Equally superb with aged Comté or a creamy Époisses, whose umami complexity is beautifully lifted by the wine’s persistent minerality and fine effervescence.
