The 2008 vintage is widely regarded as one of Dom Pérignon’s most accomplished releases of the modern era, born from a cool, precise growing season in Champagne. In magnum format, the wine gains additional depth and longevity. On the nose it offers vivid citrus zest, white peach, and toasted brioche layered over mineral chalk and iodine nuances. The palate is taut yet generous — razor-sharp acidity framing a creamy, full mousse, with flavors of candied lemon, green almond, and smoked hazelnut culminating in an exceptionally long, saline finish.
Accords avec les aliments
Exceptional alongside pan-seared Dover sole with beurre blanc and capers, where the wine’s acidity and minerality mirror the delicate brininess of the fish. Equally compelling with hand-dived scallops in a truffle cream sauce, whose richness is elegantly cut by the 2008’s laser-fine effervescence.
