Profil de dégustation
A rare and majestic vintage rosé from Francis Egly’s celebrated Ambonnay estate, presented in magnum format for optimal cellaring. Crafted from Pinot Noir and Chardonnay sourced from Grand Cru villages — predominantly Ambonnay, with parcels from Bouzy and Verzenay — and given depth by a touch of Coteaux Champenois rouge. The 2007 delivers a luminous salmon hue with a delicate, persistent mousse. The nose offers wild strawberry, dried rose petal, and orange zest over a chalky, mineral backbone. On the palate, expect creamy texture, vibrant acidity, and a long, spice-tinged finish of red cherry and candied citrus rind.
Accords avec les aliments
An ideal companion to pan-seared Breton lobster with tarragon butter, where the wine’s mineral tension and red-fruit richness echo the sweetness of the shellfish. Equally superb alongside a whole roasted guinea fowl with morel mushrooms, whose earthy depth harmonises with the Pinot Noir-driven structure and aged complexity of this Grand Cru magnum.
