About the Brewery

Cantillon

Brasserie Cantillon was founded in 1900 by Paul Cantillon in Brussels, Belgium, and remains one of the last traditional Lambic breweries in the world. Now run by the fourth generation of the Van Roy-Cantillon family, the brewery uses spontaneous fermentation — open to the wild yeasts and bacteria of the Brussels air — a technique unchanged for over a century. Cantillon is the reference standard for authentic Gueuze and Lambic, attracting pilgrims from across the globe to their traditional ‘gueuzerie’ in the Anderlecht neighborhood. Beers like Rosé de Gambrinus, Kriek, Saint-Lamvinus and the legendary Lou Pepe series are produced in tiny quantities and are among the most sought-after in the craft beer world. The brewery also operates as a living museum of Lambic brewing, offering tours of their historic wooden barrels, coolship and blending cellar.
