The Yamazaki Distillery is the birthplace of Japanese whisky — founded in 1923 by Shinjiro Torii, the founder of Suntory, in a valley south of Kyoto where the Katsura, Uji and Kizu rivers meet. This exceptional location, where warm and cool air currents converge to create a uniquely humid microclimate, has defined the character of Yamazaki single malt for over a century. Yamazaki pioneered the use of Japanese Mizunara oak — an incredibly rare and porous wood that imparts extraordinary aromas of incense, sandalwood, coconut and exotic spice found nowhere else in the world of whisky. The distillery operates a remarkable range of pot stills of different shapes and sizes, each producing spirits of distinct character, which master blender Shinji Fukuyo combines to create whiskies of astonishing complexity.
